No Bake Energy Bites

Ingredients

  • 1 c. Pecans
  • 1 c. Dates, pitted
  • 1/2 c. unsweetened shredded coconut, divided

Instructions

  • Finely chop pecans
  • Add dates and 1/4 c. shredded coconut
  • Blend together until you get a sticky paste
  • Shape into 10 balls and about an inch diameter
  • Roll balls in remaining coconut flakes
  • Place in freezer to set for at least an hour
  • Store in airtight container in fridge up to a week
