Pecans

Dates, pitted

c.
unsweetened shredded coconut, divided
Instructions
Finely chop pecans
Add dates and 1/4 c. shredded coconut
Blend together until you get a sticky paste
Shape into 10 balls and about an inch diameter
Roll balls in remaining coconut flakes
Place in freezer to set for at least an hour
Store in airtight container in fridge up to a week
