Soba and Veggie Stir-Fry

Course: Main Course

Ingredients

  • 2 T. dehydrated mixed bell peppers
  • 1 T. dehydrated mushrooms
  • 1 bundle buckwheat soba noodles (about 2 oz.)*
  • 1/2 c. freeze-dried beef mince (or dehydrated)
  • 1 t. chili sauce
  • 1 t. light soy sauce (gluten free)
  • 1 t. fish sauce

Instructions

  • Combine dehydrated vegetables and mushrooms in a zip lock bag
  • Mix all sauces in a small leak-proof bottle
  • Pack noodles separately

On the trail

  • Put the dried vegetable and mushroom mixture into a pot and add 1 cup water
  • Place pot over medium heat; bring to a boil; cook about 5 minutes, stirring occasionally
  • Add noodles; cook another 5 minutes until ready
  • Remove from the heat and drain off the excess water; pour into sauce; stir well, enjoy!

Note

  • For gluten-free, use gluten-free soy sauce and soba noodles
