Curried Pumpkin Soup

Curried Pumpkin Soup

Course: Soup, Stew, Chili
Cuisine: Indian

Ingredients

  • 1/4 c. curried pumpkin powder
  • 3 T. coconut milk powder
  • Salt/pepper, to taste
  • 1 t. pumpkin seeds (Pepita seeds)

Instructions

  • Mix pumpkin and coconut milk powders in a pint zip lock freezer bag
  • pack pumpkin seeds separately

On the trail

  • Pour soup mixture into pot; add 1 cup water and stir well
  • Place pot over medium heat; bring to a boil, stirring occasionally
  • Salt and pepper to taste
  • Remove from heat, sprinkle with pumpkin seeds and serve

Freezer bag method

  • Pour 1 cup boiling water into bag; stir well and seal
  • Let sit in a cozy for 5 minutes
  • Top with pumpkin seeds and serve
