Curried Pumpkin Soup

Ingredients
- 1/4 c. curried pumpkin powder
- 3 T. coconut milk powder
- Salt/pepper, to taste
- 1 t. pumpkin seeds (Pepita seeds)
Instructions
- Mix pumpkin and coconut milk powders in a pint zip lock freezer bag
- pack pumpkin seeds separately
On the trail
- Pour soup mixture into pot; add 1 cup water and stir well
- Place pot over medium heat; bring to a boil, stirring occasionally
- Salt and pepper to taste
- Remove from heat, sprinkle with pumpkin seeds and serve
Freezer bag method
- Pour 1 cup boiling water into bag; stir well and seal
- Let sit in a cozy for 5 minutes
- Top with pumpkin seeds and serve
